How To Make Banana Bread: The Simple Recipe

Banana Bread

Once September arrives, the heat goes away and the gray, rainy and melancholic September days arrive. You want more to be at home watching TV or playing a game of a board game with your family (I love Ludo hehe). And when you are at home, you want to have a delicious snack, some super rich cake like this delicious Banana Bread (banana bread or cake) without lactose with a tea or a good cup of lactose-free coffee with milk.

This time I bring you a proposal that personally drives me crazy. As I have already told you, it is the Banana Bread or lactose-free banana bread. Banana bread is a very moist and juicy, medium melted chocolate chip banana cake.

You are going to love the banana bread or banana cake, I know. Since I tried it the first time, it has me crazy, and I do not do it anymore because it is not a plan to swell up every day with sweets hehe But the truth is, after eating sweets, this is one of the healthiest and most nutritious. It only takes 100 gr. of sugar for the whole cake (about 10 gr. per serving). Flour, eggs, banana, nuts and cocoa make this super nutritious and complete banana cake.

So if you have ripe bananas at home, don’t throw them away. Especially when they are almost black. Those are the best ones for making Banana Bread ! The more ripe the bananas are, the more moist and rich the banana cake will be.

Don’t throw away the banana skins either. I use the husks as homemade and ecological compost for the plants and pots on my terrace. Especially for my aromatics (parsley, basil and mint) I bury them like this in the land where they are planted, and they are doing great 😉

For the lactose-free Banana Bread I use some dark chocolate chips that, although they do not contain lactose, the label says that they “may contain traces. But so far they have not made me feel bad. And optionally, you can add walnuts. Although I like it better without them, just like that.

Hmm, this lactose-free banana cake is super juicy. Also, at this time, well kept in the fridge cool, how delicious for God. An intense delicious banana flavor, and when you bite into a piece of melted chocolate it is already the best. I’m going to ask you for a favor, and do it yourself. Make this banana bread, mix all the ingredients and bake it. Because it will become one of your favorite lactose-free cakes or sweets.

  • 4 very ripe bananas
  • 300 flour
  • 100 gr. sugar
  • 3 eggs
  • ½ tsp Salt
  • 2 tsp. baking soda
  • 180 ml. sunflower oil
  • 60 ml mineral water
  • 1 tbsp vanilla essence
  • 75 dark chocolate chips
  • 30 walnuts (optional)

  1. Mix the flour, salt and bicarbonate (or chemical yeast) in a bowl

  2. Mash the bananas with a fork (the more ripe the better) until they are completely pureed.

  3. In a large bowl add the mashed banana, the sugar and the three eggs. Mix well until it is well integrated and the sugar is not noticeable.

  4. Now we add the vanilla essence, the water and the sunflower oil. We mix.

  5. When it is well mixed we add the flour in three batches integrating it well.

  6. Add the chocolate chips (reserving a few) and mix well.

  7. We pour the mixture into a greased plum cake mold placing the chocolate chips that we had reserved on top of the dough.

  8. We bake with the oven preheated to 175ºC for 60 minutes.

  9. We check with a stick and if it is ready, we cool before unmolding.
