Once September arrives, the heat goes away and the gray, rainy and melancholic September days arrive. You want more to be at home watching TV or playing a game of a board game with your family (I love Ludo hehe). And when you are at home, you want to have a delicious snack, some super rich cake like this delicious Banana Bread (banana bread or cake) without lactose with a tea or a good cup of lactose-free coffee with milk.
This time I bring you a proposal that personally drives me crazy. As I have already told you, it is the Banana Bread or lactose-free banana bread. Banana bread is a very moist and juicy, medium melted chocolate chip banana cake.
You are going to love the banana bread or banana cake, I know. Since I tried it the first time, it has me crazy, and I do not do it anymore because it is not a plan to swell up every day with sweets hehe But the truth is, after eating sweets, this is one of the healthiest and most nutritious. It only takes 100 gr. of sugar for the whole cake (about 10 gr. per serving). Flour, eggs, banana, nuts and cocoa make this super nutritious and complete banana cake.
So if you have ripe bananas at home, don’t throw them away. Especially when they are almost black. Those are the best ones for making Banana Bread ! The more ripe the bananas are, the more moist and rich the banana cake will be.
Don’t throw away the banana skins either. I use the husks as homemade and ecological compost for the plants and pots on my terrace. Especially for my aromatics (parsley, basil and mint) I bury them like this in the land where they are planted, and they are doing great 😉
For the lactose-free Banana Bread I use some dark chocolate chips that, although they do not contain lactose, the label says that they “may contain traces. But so far they have not made me feel bad. And optionally, you can add walnuts. Although I like it better without them, just like that.
